Another hearty, filling, warming Winter soup that will balance your blood sugar & contribute to good gut health - for less than the price of a coffee. You can use any paprika here - but hot smoked paprika has the best flavour! It's also rich in anti-oxidants, and teams well with the other super-healing spices. This recipe makes 4 decent portions - so double the quantities and freeze a batch if you have room. It's delicious!
Ingredients:
1 large onion, roughly chopped
3 cloves of garlic, chopped
2- 3 tsps cumin powder
1 -2 tsp hot smoked paprika
1 large sweet potato - peeled & diced - about 350g
1 can or carton of black beans, drained & rinsed
1 litre of hot stock
1 tbsp tomato puree / paste
Sea salt and freshly ground black pepper
Fresh herbs, nutritional yeast and/or a dollop of creme fraiche or cream to serve
Method:
Prep all the veggies and add the tomato paste to the hot stock
Heat some olive or rapeseed oil in a large pan & add the onion, followed by the garlic a minute later
Add the cumin and paprika, reduce the heat and stir to combine
Add the diced sweet potato and up the heat a bit
Then add the stock, bring to boil and simmer for 10 minutes
Add the beans, test the seasoning, simmer for another 10 mins
Reduce the heat and then lift out about 3 tbsps of of the veg/bean mix
Blitz the remainder with a stick blender, then add back in the chunky bits
Check the season and serve hot with fresh herbs
