Miso Salad Dressing

If you are a woman in your 40's +, this is a wonderful dressing that contains all important miso - the fabled fermented soy bean paste that is possibly the strongest of the phyto-oestrogens and taken daily, can help mimic the oestrogen, the lack of which, might be causing hot flushes and night sweats in peri-menopause. Sesame and olive oils provide valuable omega oils, lemon juice adds some virtamin C and the ACV is an all round cleanser. Enjoy!


Ingredients:

1 heaped tbsp of miso paste (dark is less sweet than light)

juice of a lemon and a little of the zest

1 tbsp of apple cider vinegar (or rice, balsamic, red wine vinegars are fine)

1 tbsp of extra virgin olive oil

1 tsp grated ginger

1 tsp sesame oil

a twist of black pepper.


Method:

Place all the ingredients in a sealable jar and shake to combine. You don’t need much of this thick dressing, so feel free to double the quantities of lemon juice and olive oil for a looser consistency.

Will keep on the fridge for weeks.
