5 minute Gut Healing Broth for One
Bone broth is the ultimate gut healing superfood so if you have a stock-pot habit, this is an amazing elixir to really get the best out of your efforts. But this recipe is equally delicious with a stock cube and some miso paste dissolved in at the end. Ginger, turmeric are garlic are all anti-inflammatory gut healers, the fermented miso will feed good gut bacteria, and mushrooms give depth of flavor as well as some Vitamin D. Add carrot for flavor and crunch, and baby kale leaves or broccoli for liver cleansers, magnesium and our old friend Vitamin C. I’ve included fresh chili for extra flavour, and buckwheat noodles for bulk. Tweak as you feel necessary.
Basic recipe – serves one:
½ a stock cube of your choice – or 500mls bone broth
a handful of buckwheat noodles
1 tsp miso paste
½ carrot, chopped
1 chestnut mushroom, or 2-3 button mushrooms, roughly chopped
1 handful of chopped kale leaves, spinach or broccoli spears
1 spring onion
1 thumb of fresh ginger, finely chopped
1 small clove of garlic, sliced finely
1 small chili, sliced (optional)
1 thumb of fresh turmeric root, chopped
1 tsp fish sauce
1 tsp soy sauce
a tiny splash of tasted sesame oil to finish
Bring 500ml of water or broth to a rolling boil. Add the ginger, garlic, turmeric and chili, then the noodles if you’re using them. Bring back to the boil and add the carrot, mushroom and fish sauce to taste. When the noodles are nearly cooked, add the greens and spring onions. Return to a boil. When you’re ready to eat, take the soup off the heat, stir in the miso paste and finish with the soy sauce and sesame oil.
Tip all into a nice big bowl and slurp to your heart’s content.
