This is a really delicious way to enjoy a spicy delicious tofu brunch or light supper..super simple, nutritious and delicious.. of course. You have the added bonus here of soy isoflavones - photo-oestrogens that help regulate the female cycle, particular for women dealing with the menopause. Pimp at your leisure with toasted seeds, avocado slices, black beans, spring onions, peppers and more.
For the basic recipe, you will need:
1 small garlic clove
4 cherry tomatos per person
1/2 spring onion or small handful of chives / person
1/2 small red or green chile /person
75g- 100g of firm tofu / person
1 slice sourdough bread / person
salt and pepper
olive oil
Method:
Warm a tablespoon or 2 of olive oil in a frying pan, then grate in the garlic clove. Add the cherry tomatoes and let them cook gently in the garlicky oil, before adding the sliced chili and allowing them to infuse. Then add the chives or spring onions. If you're using peppers or onions, now is the time to add them, like a Spanish omelette. Crumble in the tofu and mash gently with a fork. Don't over work it. Gently season with salt and pepper. Turn out onto toasted soughdough bread - add slices of ripe avocado for a delectable vegan brunch alternative.
