Reviving & Replenishing - Onion & Garlic Broth

Natural health doesn't come any more simple and effective than the not-so-humble onion and it's favourite cousin, garlic. Almost mythical in country medicine and folklore, the allium family help to cleanse the blood and keep it flowing, reducing cholesterol and preventing clots. Effective in the treatment of bronchitis, asthma and arthritis and as a wonderful antidote to the cold weather, this simple broth is great way to bolster your immunity and warm your soul in Winter.

Ingredients:

3 medium onions, finely sliced

4 cloves of garlic, crushed

1 litre veg, beef or chicken stock

1 tbsp olive oil

1 large knob of butter

1/2 tsp flour

salt & pepper

dash of balsamic vinegar

Simply slice up your onions and then temper very slowly in the butter and olive oil. After a few minutes, add the crushed garlic and stir. Try not to let the onions catch and definitely do not burn the garlic. After a while add a little flour and mix in. Warm the stock in a pan and then gently add to the onion mixture as is you were making a sauce. Keep adding and then bring to a gentle boil, seasoning as you wish.

Serve with cheese on toasts floating in the broth and a sprinkle of parsley.

Then go back to bed. xx
